Cured Fish and Seafood

Fish and shellfish products preserved or transformed through salting, brining, drying, smoking, fermentation, acidification or combinations of these processes.

Cured seafood shares technologies with meat curing but is not simply meat with a different species. Tissue structure, spoilage ecology, fat oxidation and regulatory controls differ.

Species identification, harvest controls, freshness, temperature and parasite risk shape the safe process. Histamine-forming fish demand particularly strict time-temperature control.

Brining and drying reduce available water but rates depend on fillet thickness, skin, fat and salt method. A stated weight loss does not automatically establish shelf stability.

Cold-smoked and vacuum-packed fish require product-specific control because smoke flavour and reduced oxygen do not remove botulism risk. Refrigeration and validated barriers remain central.

Fermentation or acidification may contribute preservation, but equilibrium pH, salt, water activity, temperature and process hygiene must be demonstrated for the product.

Use seafood-specific hazard analysis, current authority and measured endpoints. Keep named products and regional identities distinct rather than forcing them into a generic meat process.
