Dry and Semi-Dry Sausages

The sausage family preserved partly through controlled moisture loss, sometimes combined with fermentation, cure, smoke, heat and refrigeration.

Dry and semi-dry sausages are defined broadly by moisture removal, but the terminology varies across countries, standards and product traditions.

Many are fermented before drying, while others rely more heavily on cure, smoke, heat or salt. Drying does not prove fermentation.

Weight loss describes mass change, while water activity and hurdle distribution better describe product stability. Diameter and composition affect the endpoint.

Some semi-dry sausages are heated or hot-smoked, while classic dry sausages may remain uncooked. These distinctions should be explicit.

Salami, summer sausage, sucuk, chorizo and many regional products remain individual records with protected or traditional requirements.

Define fermentation, drying, heat, smoke, packaging and storage separately, and verify the slowest representative unit.
