Drying Shrinkage and Structural Change

The dimensional, textural and matrix changes that accompany moisture loss as a cured meat contracts, firms and may deform during drying.

Weight loss and dimensional shrinkage are related but not identical. Fat, casing, protein structure and geometry determine how much a piece shortens, narrows or flattens.

As water leaves, particles pack more closely and proteins become firmer. Fermentation, heat and salt alter the matrix, so equal weight loss can produce different textures.

Rapid surface evaporation can make the exterior contract before the centre, creating stress, wrinkles, voids, casing separation or a hard rim around a softer core.

Natural, collagen, fibrous and other casings differ in elasticity and moisture transfer. Poor matching can cause folds, loose casing or splits as the filling contracts.

Record weight, dimensions, surface condition and representative core findings. Images and position maps can reveal chamber or shape effects not visible in average weight loss.

Manage humidity, temperature and restrained airflow so moisture migration can follow surface evaporation. Use water activity and internal inspection where the release decision requires them.
