Enzymes in Ripening
The endogenous and microbial catalysts that transform proteins, fats and other compounds during curing and maturation, affecting flavour, aroma and texture.
Muscle and fat contain endogenous enzymes, while bacteria, yeasts and moulds can contribute additional activities. Their relative importance changes with product and process.
Protein breakdown can soften structure and release peptides and amino acids that contribute taste and aroma precursors. Excessive or uncontrolled activity can create bitterness or weak texture.
Lipases release free fatty acids that may form desirable aroma compounds or become oxidation substrates. Fat quality and oxygen exposure influence the result.
Salt, pH, temperature, water activity, cure and time alter enzyme activity. A process that suppresses microbes does not necessarily stop all endogenous chemistry.
Changes in texture or flavour cannot be assigned to one enzyme without analytical support. Product comparison, process history and chemical or microbiological evidence strengthen interpretation.
