Excessive Wrinkling and Rind Hardness
A drying fault in which the outside contracts into pronounced wrinkles or a hard rind while the internal moisture profile and texture no longer develop evenly.
Dry-cured products contract as water leaves. The fault begins when the surface becomes rigid or deeply folded and impedes uniform further drying.
Low relative humidity, direct airflow, excess air speed or abrupt transitions drive rapid evaporation at the surface and create a moisture gradient.
Large diameter, low permeability, dense stuffing, surface deposits and uneven composition can intensify the rind while the core remains soft.
The outer layer becomes tough and the slice may show a dry ring, fissures or loose casing. Weight loss can continue without uniform internal stabilization.
Inspect the cut face and centre, compare chamber positions and review humidity, airflow, temperature and weight-loss curves rather than relying on total loss alone.
Reduce direct air, use gradual humidity transitions, maintain spacing and rotate only where validated. Severe internal uncertainty requires hold and disposition, not cosmetic rehumidification.
