Fat Composition, Melting and Firmness

Animal fat contains mixtures of triglycerides built from saturated and unsaturated fatty acids. The proportions influence crystal formation, melting range, oxidative stability and sensory character.

Beef fat is often firmer and higher-melting than pork fat, while poultry fat is commonly softer, but depot, breed, age, feeding and season can substantially change the result within a species.

Meat fat does not have one exact melting point because different triglycerides melt over a range. Processing temperature determines whether the fat remains discrete, becomes plastic or releases oil.

Firm, well-chilled fat cuts into defined particles. Soft or warm fat smears across lean surfaces, obscures colour, interferes with protein extraction and creates greasy texture or poor drying.

Visible fat cubes in salami and whole-muscle fat covers require stability through grinding, fermentation and maturation. Soft fat can deform, oxidise more rapidly and give an oily surface.

Raw-material specifications should identify species, depot or cut, temperature and expected firmness where fat structure defines the product. Product-specific traditions take precedence over broad species rules.
