Redox Potential in Fermentation
The oxidation-reduction state of a meat system, reflecting its tendency to accept or donate electrons and influencing microbial ecology, pigment chemistry and flavour reactions.
Redox potential describes the balance of oxidising and reducing conditions. Meat begins with spatial variation and changes during grinding, mixing, fermentation and oxygen consumption.
Entrained air, casing permeability, particle size and vacuum affect oxygen availability. Surface and centre can have different redox conditions.
Lactic acid bacteria, staphylococci and other organisms consume oxygen or produce metabolites that shift the redox environment.
Reducing conditions support cured-colour chemistry and can influence lipid oxidation and aroma pathways. A more reducing value is not universally better.
Electrode placement, equilibration, reference system and sample preparation affect readings. Comparing numbers requires a consistent method.
Use redox as explanatory or investigative evidence alongside pH, temperature, oxygen and product results. Do not substitute it for validated fermentation or safety endpoints.
