Sugar Metabolism in Fermentation
The uptake and conversion of fermentable carbohydrates by meat-fermentation microorganisms into acids and other metabolites that affect pH, aroma, texture and process speed.
Added carbohydrate supplies fermentable substrate for acidifying organisms. Meat contains limited usable carbohydrate, so the formulation strongly influences the acidification potential.
Dextrose is readily used by many meat cultures, while sucrose, lactose and larger carbohydrates depend more on strain capability and can produce different rates and residual sweetness.
Homofermentative pathways favour lactic acid, while other organisms and conditions can produce acetic acid, carbon dioxide, ethanol and aroma-active metabolites.
More fermentable sugar does not create unlimited safety. It may lower pH beyond the sensory target, alter water binding and suppress flavour-producing organisms.
Temperature, salt, cure, pH tolerance and inoculum viability govern whether the intended culture can use the selected substrate before competitors grow.
Specify sugar by mass, culture and target pH trajectory. Measure pH rather than predicting the endpoint from a generic sugar rule or recipe name.
