Fermented Sausages
The sausage family in which controlled microbial activity changes acidity, aroma, colour or texture, usually alongside cure, drying, heat, smoke or refrigeration.
Fermented sausages are raw or cooked comminuted products in which selected or indigenous microorganisms make a deliberate technological contribution. Fermentation may be rapid and acidic or slow and flavour-led.
Lactic acid bacteria convert available carbohydrate into acids at a rate governed by strain, temperature, salt, cure, sugar and meat conditions. The measured pH path matters more than elapsed time alone.
Drying, water activity, heat, smoke, nitrite, packaging and refrigeration can contribute independently. A fermented sausage may remain perishable, while some dried sausages are not fermented.
Starter cultures improve predictability when matched to the process, but they do not compensate for poor hygiene, wrong temperature, unsuitable substrate or excessive contamination.
