The taste and smell of a cured product, built over time from the breakdown of proteins and fats, from fermentation acids, and from salt, spices and smoke.
Flavour and aroma are not added to a cured product so much as developed within it. The deep, savoury character of a good salume is mostly the work of proteolysis, the slow breakdown of muscle proteins into peptides and free amino acids, which carry the umami and mature notes that mark long ageing. This is why time is a flavour ingredient in its own right, not just a safety hurdle.
Alongside it, lipolysis frees fatty acids from the fat, and a measured, controlled oxidation of those fats produces the volatile compounds, the aldehydes, esters and ketones, that give cured meat its nutty, fruity and gently fatty aromas. The line here is fine: a little oxidation builds character, while too much tips over into rancidity, which is a fault rather than a flavour. Fermentation adds the clean lactic tang that reads as sour, salt sharpens and balances the whole, and spices and smoke lay their own notes over the top.
