Forcemeat Systems
A forcemeat is more than chopped meat. Lean protein, fat, liquid, salt, mechanical action and particle structure interact to create a stable matrix.
Coarse and country forcemeats preserve visible particles and a rustic texture. They require enough extraction and compression to bind without erasing the intended definition.
Fine forcemeats, mousselines and panades rely on finer comminution, temperature control and often added liquid or binder. Stability depends on controlled protein extraction and fat dispersion.
Lean provides functional protein, fat provides flavour and texture, and liquids or binders alter yield and tenderness. Their proportions must match the product rather than follow one universal ratio.
Cold ingredients and equipment protect fat structure. Salt, liquid, spices and binders are added in a deliberate sequence so extraction develops without overheating.
Forcemeat systems support sausages, pâtés, terrines, galantines and related products. Protected or named products may restrict binders, species, particle size or preparation method.
