Formed and Restructured Meat Products

Products made by arranging, binding or forming pieces, flakes or comminuted meat into a new shape rather than retaining the intact anatomy of one muscle.

Restructured products include bound pieces, formed steaks, logs and shaped portions. They range from coarse, visible muscle pieces to finely comminuted systems.

Salt-soluble proteins, mechanical action, pressure, heat-set gels, enzymes or permitted binders may create cohesion. The method determines texture, labelling and process controls.

When pieces are combined, former surfaces can become internal. A product that looks like a whole steak may therefore need a cooking and handling model closer to comminuted meat.

Moulds, extrusion and portioning systems control density and shape. Uneven filling, air pockets and variable thickness affect yield, cooking and cooling.

Names and presentation should not imply an intact muscle when the product is reconstructed. Ingredient, allergen and processing declarations depend on jurisdiction and formulation.

Document raw-material status, binding method, mixing, form dimensions, temperature, cook or storage instruction and line sanitation. Validate the slowest thermal or drying location.
