Formula Scaling and Batch Calculation
Converting a validated formula to a defined batch while preserving ingredient ratios, restricted-ingredient limits and a transparent calculation basis.
The calculation begins with a declared basis: meat block, total batch, brine, finished product or another controlled denominator. Percentages cannot be compared until their bases are aligned.
Each ingredient is calculated from the target batch and recorded in mass units. Metric-first calculations reduce conversion error, while displayed imperial equivalents remain secondary.
Curing agents, phosphates, antioxidants and other regulated ingredients require calculation against the legally defined basis and actual product concentration. Rounding must not push the formulation beyond the permitted or validated limit.
A premix name is insufficient without composition or declared strength. Calculations distinguish active nitrite or nitrate from the mass of the commercial blend.
A second check compares expected total to weighed total and investigates discrepancies. Scale capacity, resolution, tare, transcription and unit errors are recorded rather than corrected silently.
Scaling should not change process geometry, equipment load or heat and mass transfer beyond the validated range. A much larger batch can require process revalidation even when percentages are unchanged.
