Formulation and Recipe Design
The disciplined design of a meat formulation using defined percentages, ingredient functions, process requirements, product identity, yield and safety constraints.
A formulation is a recipe written so that it can be scaled, repeated and checked. The difference from a recipe is that every ingredient is expressed as a percentage of a stated basis rather than as a quantity, so the same document works for a two-kilo trial and a fifty-kilo batch without anything being recalculated by hand or misremembered.
The basis has to be stated because a percentage means nothing without it. The house convention is to write a formula per 1,000 g of the primary meat cut, with every other ingredient expressed as a ratio of that, which makes the primary the anchor and everything else proportional to it. Dose percentages are a separate question with a separate denominator: salt and curing salt are calculated against the meat block, the meat and fat together, before other additions. Confusing the scaling basis with the dosing basis is the single commonest way a formulation goes wrong on paper while looking perfectly reasonable.
Ingredients then fall into groups by what they are for, and the groups behave differently. The meat and fat are the structure, and their ratio decides the character of the product more than any seasoning does. Salt and cure are the safety and function group, fixed by rule rather than taste: 1.8 to 2.5 per cent salt of the meat block, curing salt at 0.25 per cent giving 156 ppm. Sugar is fuel for fermentation where there is a culture, and seasoning where there is not. Spices, cultures, water and binders each have a job. A designer who knows which group an ingredient belongs to knows immediately whether it is adjustable to taste or fixed by safety.
Constraints come before creativity, and they are worth listing in order. Safety first: the salt and cure figures, the endpoint, the weight-loss target. Then the process: a formula for a fermented sausage needs a fermentable sugar and a culture, and one for a whole muscle does not. Then identity, meaning what makes the product recognisably itself, which for a traditional item is usually a short list of non-negotiables. Only then preference.
The last discipline is recording. A formulation that produced a good batch is worth nothing if the batch cannot be reproduced, so the sheet carries the percentages, the actual weights used, the dates, the hanging weight and the target, and what happened. Formulation design is an iterative craft, and the log is the only thing that makes the iteration real rather than remembered.
