Freeze–Thaw Quality Effects
The changes in purge, texture, protein function, oxidation and appearance caused by freezing, frozen storage and thawing.
Freezing damages meat mechanically, and how much damage it does depends almost entirely on how fast it froze. Water in the muscle turns to ice, and ice takes up more room than water. Frozen slowly, the crystals grow large and form mostly between the cells, where they push the fibres apart and puncture the membranes. Frozen fast, the crystals are small and numerous and do far less harm. This is the whole reason commercial blast freezing exists and the reason a domestic freezer, which takes hours to do what a blast freezer does in minutes, is harder on meat.
The damage shows up on thawing as drip. Punctured cells cannot hold their water, so it runs out, carrying dissolved proteins, salts and colour with it. That lost fluid is lost yield and lost flavour, and it also matters functionally: a sausage made from heavily drip-damaged meat has less water to hold and less intact protein to hold it with, so the mix binds worse and the finished product can be dry and crumbly despite the fat being right.
For curing there are two consequences that are easy to miss. Freezing does not lower the microbial count in any dependable way; it pauses growth and much of the population survives to resume when thawed, so frozen meat is not cleaner meat. And frozen storage does not stop oxidation, which is why long-frozen fat turns rancid even at proper freezer temperatures. Fat is the part of a cured product with the shortest patience, so freezing a fatty trim for months and then using it in a salame that will hang for three more is asking a lot of it.
The one place freezing genuinely helps is temperature during comminution. Partly frozen meat and fat cut cleanly through a plate instead of smearing, and keeping the mix near or slightly below zero is standard practice for exactly that reason. That is a deliberate short chill, not frozen storage, and the two should not be confused.
Practically: freeze fast and in thin portions rather than in a block, wrap tightly to keep air off the fat, use frozen material within a few months rather than a year, and thaw slowly in the refrigerator so the meat can reabsorb what it can. Never thaw at room temperature, which warms the surface into the growth range long before the centre has moved.
