Fresh and Uncooked Prepared Meat Products
The family of seasoned, marinated, formed, stuffed or otherwise prepared raw meat products that remain uncooked and ordinarily require refrigeration or freezing and cooking before eating.
Fresh sausage, formed patties, marinated cuts, stuffed raw products and seasoned meat preparations share a raw status but differ in anatomy and processing.
Grinding and mixing increase surface area and distribute microorganisms through the batch. Forming and tenderisation can move former surfaces into the interior.
Salt, acid, spices and marinades affect flavour and sometimes microbial behaviour, but they do not establish preservation unless the complete process is supported.
Receiving, preparation, display, thawing and domestic transport are part of product control. Short time at warm temperature can consume a large part of practical shelf life.
Instructions must reflect species, comminution, stuffing, thickness and intended consumer use. Colour alone is not a reliable doneness indicator.
Specify raw-material status, allergens, process, package, storage life and cooking. Keep raw and ready-to-eat tools, surfaces and traffic separated.
