Overview
Gyulai kolbász is a Hungarian PGI smoked and cured pork sausage, often sold as a linked pair under the name Gyulai pároskolbász. Paprika, garlic, pepper and caraway shape its flavour.

How to recognise it
The protected sausage is slim, reddish-brown and commonly paired, with a paprika-red slice and clearly distributed fat. Smoke and paprika should be balanced rather than bitter.
Origins and history
The sausage is associated with Gyula and the wider south-eastern Hungarian plain, where pig slaughter, paprika production and beech smoking formed a durable regional style.
