Heterofermentative Lactic Acid Bacteria
Lactic acid bacteria that convert carbohydrate into lactic acid together with substantial carbon dioxide, ethanol, acetate or other products through heterofermentative pathways.
Obligately or facultatively heterofermentative LAB produce a broader metabolite profile than predominantly homofermentative organisms.
Carbon dioxide can create holes or swelling, while acetate and other metabolites influence flavour and microbial ecology. Effects depend on species, strain and substrate.
Metabolic behaviour can change with available sugars, oxygen and electron acceptors. A textbook group label does not predict one fixed product response.
Selected strains may be used for particular sensory or protective functions, but the primary acidification and gas profile must match the sausage style.
Unexpected gas, sharp aroma or slow pH change should be investigated using culture identity, sugar, temperature and contamination evidence.
Use defined cultures and verify pH, gas and sensory response in the actual formula. Do not infer safety or suitability from the metabolic label alone.
