Homofermentative Lactic Acid Bacteria
Lactic acid bacteria that convert a large share of fermentable carbohydrate to lactic acid under the stated conditions, generally with less gas than heterofermentative pathways.
Predominantly homofermentative LAB channel glucose mainly toward lactic acid, supporting efficient acidification with comparatively limited carbon-dioxide production.
Selected strains are widely used to make sausage fermentation predictable. Acid rate and final pH differ among species, strains and commercial blends.
Temperature, salt, nitrite, sugar, initial pH and competing flora affect growth and acid production. The same culture can perform differently in another formula.
Rapid acidification can improve control but may create sharp flavour or brittle texture if the product identity calls for a slower ferment.
Record culture, lot, dose, temperature and pH curve. A label claim about homofermentation does not replace measurement in the product.
Use a defined food-grade culture and follow manufacturer instructions. Pair acidification with cure, hygiene, heat, drying and storage as required.
