Irradiation of Meat Products

A regulated commercial treatment that exposes food to a controlled absorbed dose of ionising radiation to reduce specified microorganisms, insects or other hazards without making the food radioactive.

Food irradiation uses approved sources of ionising radiation and controls the absorbed dose delivered to the product. The treatment transfers energy; it does not make the food radioactive.

Permitted foods, dose limits, purposes, facilities and labelling vary by jurisdiction. Approval for one commodity or objective should not be generalised to every meat product or country.

Irradiation can reduce susceptible pathogens and spoilage organisms, but the achieved reduction depends on dose, organism, product, temperature, atmosphere and distribution. It is not automatically sterilisation or shelf stability.

Commercial control requires dosimetry, dose mapping, product density and geometry, loading configuration, source control and compatible packaging. Minimum and maximum dose positions must remain within the authorised process.

Dose and product conditions can influence colour, oxidation, flavour, texture and nutrients. Process design balances the intended microbial effect with product quality and legal limits.

Irradiation supplements rather than replaces approved sourcing, hygiene, temperature control, packaging and shelf-life management. It is a regulated facility process, not a home-curing technique.
