Knives, Saws and Hand Tools
Manual cutting, trimming and fabrication tools selected, maintained, cleaned and controlled for accurate meat work without creating avoidable injury, contamination or foreign-material hazards.
Tool families and task matching
Boning, breaking, trimming, skinning and slicing knives use different blade lengths, stiffness, profiles and points. Cleavers and hand saws address heavier separations, while steels, stones and powered systems maintain edges. The correct tool is chosen for the material, cut direction, product temperature, working space and operator. A long flexible slicer is not a substitute for a stiff boning tool, and a hand knife should not be forced through frozen material or bone.
Edge condition and cutting force
A sharp, stable edge reduces crushing and the force needed to start and continue a cut. A blunt or damaged edge encourages extra pressure, awkward wrist posture and uncontrolled release when the blade finally moves. Sharpness alone does not prove serviceability: the edge geometry, blade thickness, steel condition and task must agree. Honing, sharpening and resurfacing are different maintenance actions and should preserve the maker’s intended geometry.
Handles, grip and ergonomics
Handles must provide secure control when hands, gloves and product are wet or fatty. Cracks, looseness, worn texture, projecting rivets and inaccessible joints create both injury and hygiene risks. Tool selection should consider hand size, grip, repetition, reach and the force required by the cut. Rotation of tasks, suitable working height and maintained edges can reduce fatigue, but production rate must not force the operator to cut outside a controlled path.
Safe use and protective equipment. Cut on a stable surface with the blade path directed away from the body and the supporting hand. Carry a knife with the blade controlled and pointing down, and store it in a scabbard, rack or defined container rather than loose in a sink or drawer. Knife-resistant gloves, aprons or forearm protection are selected by risk assessment and maintained correctly. Protective equipment complements task design, training and edge control; it does not make an unsafe cutting action acceptable.
Hand and powered saws
Hand saws require a sound blade, secure handle and controlled support of the product. Powered meat band saws add a continuously moving blade, wheels, guides, tensioning, table and adjustable guard. The exposed working portion must be minimised for the cut, and push guards or fences should keep hands out of line with the blade. Small pieces and end cuts require a defined safe method rather than moving fingers progressively closer to the cutting line.
Hygiene and zone control
Blades, handles, joints, scabbards, saw frames and maintenance tools are food-contact or near-food surfaces and must be cleanable and kept in sanitary condition. Tools may be assigned by task, species, allergen or raw and ready-to-eat zone to prevent cross-contamination. Cleaning and disinfection must include the handle and storage system, not only the cutting edge. Loose storage in wet conditions encourages recontamination and damages edges.
Inspection and fragment accountability
Before use, inspect the edge, point, spine, handle, fasteners and any saw teeth or joints. Damaged tools are removed and identified so they cannot return unnoticed. If a blade chips, a tip breaks or a saw loses a tooth, stop and establish whether every fragment is accounted for. Product since the last satisfactory check is held and assessed using the actual failure, exposure and detection capability rather than released because no fragment is immediately visible.
Cleaning, sharpening and storage
Wash sharp tools by a method that keeps hands aware of the edge; do not leave knives hidden beneath opaque water or other utensils. Clean, disinfect where required, dry and store so edges do not contact one another. Sharpening devices have their own cutting, pinch, wheel and fragment hazards. Powered sharpening requires its guards and controls, and the cleaned tool must not carry abrasive, lubricant or metal residue back to product.
Training and records
Training should cover task-specific tool choice, controlled cutting direction, edge maintenance, protective equipment, cleaning, storage, damage reporting and first response. Industrial programmes may identify tools and record issue, sharpening, inspection and disposal; smaller operations can use a simpler visible system. The essential control is that the right, intact and hygienic tool reaches the trained person, and that damage or cross-zone movement is detected before it affects product.
