Lactobacillus sakei
Also known as Latilactobacillus sakei, Lactobacillus curvatus
The workhorse fermenting bacterium of European dry sausage. Cold-tolerant and vigorous, it dominates the ferment, drops the pH quickly and drives out spoilage organisms.
Lactobacillus sakei, with its close relative Lactobacillus curvatus, is the lactic acid bacterium most associated with traditional European fermented sausages. It is well suited to the job: it grows at the cool temperatures of a Mediterranean-style ferment, tolerates salt, and competes strongly, so it tends to take over a sausage even without a deliberate starter.
Its work is to turn the added sugar into lactic acid, dropping the pH quickly in the crucial early days. That fast acidification is the safety heart of a fermented sausage, closing the window on Staphylococcus aureus and setting the meat firm, while building the tang that defines the style. As a chosen starter it makes the process fast and repeatable rather than a gamble on the house flora.
It is the classic expression of the Microbial Control Pillar: a wanted organism that, given the right conditions and a head start, crowds the unwanted ones out. In most starters it is paired with the colour-and-flavour staphylococci, which work more slowly alongside it.
