Lethality and Time–Temperature Processes
Lethality is a measured reduction in specified pathogens achieved by a defined process. It is not simply the point at which the meat looks cooked or reaches a preferred texture.
Higher temperatures may require shorter exposure and lower temperatures longer exposure, but only within a supported model. Species, fat, salt, water activity, humidity and prior drying can change heat resistance.
HACCP validation and verification establish that the process is capable and is being followed. Routine monitoring records the critical product variables for each run.
Probe position, product diameter, rack location and equipment loading influence the slowest-heating point. Instruments must be suitable and checked, and the monitored unit must represent the batch.
Holding time and residual heating may contribute to lethality only when the complete process is supported. Unmeasured carry-over heat should not be used to repair an incomplete cook.
Under-cooking requires a documented response. Supported recooking or reprocessing may be possible, but appearance, smell or a later refrigeration step cannot prove that the missed lethality was restored.
