A purified water-based condensate of wood smoke that gives smoke flavour and colour without a smokehouse.
Liquid smoke is real smoke passed through water, condensed and then filtered to strip out much of the tar and the polycyclic aromatic hydrocarbons that raise concern in traditional smoking. It is brushed on, dipped, atomised or mixed into a batter, and it lends smoke flavour and a browned colour without a fire. It also carries acids that can lightly lower the surface pH. It is a flavouring, not a preservative process, and it does not replace the drying and cure that make a product safe.
