Lukanka Panagyurska is a Bulgarian TSG dry sausage with the flattened shape, dense slice and warm spice profile characteristic of lukanka.

How to recognise it
It is straight or gently curved and pressed flat during drying. The slice is dense, red-brown and finely marbled, with a dry, cohesive texture and no wet centre.
Origins and history
The name is linked historically with Panagyurishte, but TSG protection preserves the traditional composition and method rather than restricting all production to one geographical area.
