How to recognise it
The sausage is pressed into a flattened section and matures to a firm, dense red-brown slice with fine fat distribution and a characteristic spice aroma.
Origins and history
The sausage is associated historically with Troyan and the Central Balkan tradition of seasoned, flattened dry sausages. TSG protection preserves the traditional product method rather than a strictly exclusive place of manufacture.
