Marination, Adobo and Acid-Preserved Products

A product-family bridge for meats seasoned or conditioned with salt, spices and acidic liquids, including adobo and escabeche traditions, without assuming that every marinade preserves the product.

Marination can tenderise or flavour, while adobo and escabeche carry distinct regional and culinary identities. The category does not make them interchangeable.

Vinegar, wine, citrus and salt diffuse according to piece size, time and composition. A measured liquid pH does not prove the centre reached the same condition.

Some products are marinated before cooking; others are cooked and held in seasoned acidic liquid. Their hazards, shelf life and package controls differ.

Paprika, garlic, herbs, oil and regional spice systems may define style. Oil can exclude oxygen locally but does not by itself create safe preservation.

Use a supported recipe or process, measure relevant endpoints and maintain refrigeration unless stability is demonstrated for the complete product and package.
