Meat Species, Age and Production System

Pork, beef, sheep, goat, poultry, game and other meats differ in muscle fibre, fat composition, pigment, flavour and connective tissue. A cured-meat formula cannot assume that equal weights of different species will behave identically.

Age and physiological maturity influence connective-tissue cross-linking, colour, flavour and tenderness. Sex and reproductive status may also affect aroma and fat character, but the importance varies by species and product.

Breed, genotype, exercise, housing and growth rate can alter carcass composition and muscle properties. Production labels should not be used as automatic quality guarantees without defining the measurable raw-material requirement.

Diet strongly influences fatty-acid composition in monogastric animals and can change firmness, oxidation susceptibility and flavour. Grass, grain, forage and by-product feeding may produce desirable or undesirable characteristics depending on the product.

Species and production history affect salt uptake, colour development, comminution, binding, drying and sensory outcome. A schedule validated for one raw material may require reassessment when the species or production system changes materially.

Record species, supplier, cut, lot and relevant production claims. Protected products and regional traditions may prescribe breed, feeding, age or origin, and those requirements take precedence over generic substitutions.
