Meat Structure and Composition

The organisation of muscle fibres, connective tissue, fat, water, proteins, minerals and minor constituents that determines how meat behaves during curing and processing.

Muscle contains fibres grouped within connective-tissue frameworks, supplied by vessels and nerves and interspersed with fat. Cutting direction and anatomical source preserve or disrupt this hierarchy.

Water occupies several physical environments within muscle. Myofibrillar, sarcoplasmic and stromal proteins differ in solubility and function during salting, mixing, heating and drying.

Collagen amount, cross-linking and distribution affect toughness, shrinkage and gelatin formation. Elastin remains comparatively resistant to ordinary cooking.

Fat location and fatty-acid composition affect firmness, flavour and oxidation. Minerals, pigments, enzymes and metabolites influence colour, pH and process response.

Grinding, salting, freezing, heating, fermentation and drying alter cell structure, protein interactions and moisture pathways. The same composition can behave differently after different histories.

Specify species, cut, trimming, fat source and raw-material condition. Link general meat science to the actual product rather than treating all muscles as interchangeable.
