Microbial Core Softening and Breakdown

Deep internal softening or structural breakdown associated with microbial growth, proteolysis or a failed internal cooling, curing, fermentation or drying environment.

Microbial core softening is a deep internal loss of structure that can range from slight pulpy texture to wet breakdown, gas, abnormal odour or tissue separation. The surface may remain firm and visually acceptable.

Large diameter, residual heat, low oxygen, slow salt or acid penetration and moisture gradients can create an internal environment unlike the surface. Product geometry and loading can therefore concentrate failure in the centre.

Proteolytic spoilage organisms, post-process contamination, inadequate cooling, delayed acidification and incomplete drying are possible mechanisms. Autolysis and formulation can contribute, but the appearance alone does not identify the cause.

Open representative units through the centre and compare pH, water activity, temperature history, odour, gas and structure with unaffected product. Preserve samples and process records before rework or disposal.

Normal surface colour or smell does not validate the core. Cooking, freezing or additional drying cannot be assumed to remove every organism, toxin or contamination route after an uncontrolled process.

Control product size, raw-material hygiene, fermentation, cooling, drying and storage as a connected system. Verification should challenge the slowest-heating, slowest-cooling or slowest-drying representative position.
