Microbial Groups by Environmental Tolerance

A functional classification of microorganisms by tolerance to salt, acid, low water activity, temperature, oxygen and other environmental stresses relevant to cured meat.

Tolerance groups help predict which organisms remain plausible as salt, pH, water activity, temperature and oxygen change during processing.

Halotolerant and halophilic organisms differ in salt requirements and limits. Salt percentage alone is weaker than the product’s full water-phase and water-activity context.

Acid-tolerant organisms survive low pH better than others, while psychrotrophic organisms may grow under refrigeration. Survival and growth limits are different.

Xerophilic moulds and osmophilic yeasts can remain relevant where many bacteria cannot grow. Surface conditions can differ from the centre.

Salt, pH, water activity, nitrite, temperature and competitive flora interact. A value inhibitory in one matrix may not transfer directly to another.

Start with the product profile, then identify plausible groups and organisms. Confirm critical decisions with product-specific or challenge evidence rather than taxonomy alone.
