Microclimate
Microclimate is the temperature, humidity and airflow the meat matures in. It decides whether a cure dries evenly and cleanly, and it is the second corner of the Safety Triangle.
Microclimate is the small, controlled climate a cure matures in: its temperature, its humidity and the airflow around it. It is the condition of the air doing the work, as distinct from the meat itself. In the Curesmith standard the working temperature is roughly 12 to 14 degrees Celsius, and the working humidity runs about 65 to 80 per cent relative humidity, ideally 70 to 75 per cent, with only gentle, indirect air movement and no fan blowing directly on the meat.
Every part of that is a balance. Too warm and spoilage and pathogens gain ground; too cold and drying stalls or runs unevenly. Humidity is the finer art: too dry and the surface hardens before the inside can catch up, which is case-hardening; too damp and the surface stays wet and grows the wrong moulds. Airflow carries moisture off the surface, but any air blowing across the meat carries it off faster than moisture can travel out from the core, drying the surface ahead of the centre; that is why the air must be gentle and indirect, and why in a small chamber, one under about 20 cubic metres, there should be no fan blowing on the product at all. A good microclimate simply lets the meat lose water steadily from the centre outward.
One thing the cool temperature does not do is make the meat safe on its own. Some pathogens, Listeria monocytogenes above all, grow perfectly well at fridge temperatures, down close to freezing. So the microclimate governs drying and mould, while the actual safety comes from the water activity and pH it allows the meat to reach. Cold buys time; it does not sterilise.
Because humidity and airflow decide whether drying is even, the microclimate is where case-hardening is won or lost. Match the drying at the surface to the rate moisture can travel from the centre and the cure dries cleanly; rush the surface and you trap a wet, unsafe core behind a dry shell.
