Moisture Content and Moisture–Protein Ratio

The amount of water in a meat product and the ratio of moisture to protein used in some compositional, identity and process specifications.

Moisture content expresses how much water is present on a stated basis. Fat, protein, salt and added ingredients affect the percentage even when products have similar water activity.

MPR divides measured moisture by measured protein and is used in certain product standards and process comparisons. Both analytical values must be compatible and representative.

Water activity describes the energy state and availability of water, not its total amount. Products with similar moisture can have different aw because composition and binding differ.

MPR can show drying or formulation trends, but added water, fat variation and protein concentration influence the ratio. It should not be interpreted without the formulation.

Representative sampling is critical because fat and lean distribution changes moisture and protein results. Method, units and rounding affect regulatory comparison.

Use the metric required by the product specification or jurisdiction and keep it separate from aw-based stability decisions. Record the calculations and source analytical results.
