Mushy, Soft or Pulpy Texture

An unintended loss of firmness and definition caused by raw-material condition, excessive proteolysis, weak protein structure, moisture imbalance, fermentation, heating or microbial deterioration.

Mushy, soft and pulpy describe different degrees of low resistance, weak cohesion or lost particle definition. Diagnosis begins by locating the defect and comparing it with the intended product texture.

High ultimate pH, damaged muscle, soft fat, excessive connective-tissue degradation or poor raw-material condition can weaken structure before processing begins.

Insufficient protein extraction, too much water, unsuitable particle size, over-acidification, enzyme activity or poorly controlled heat can produce a weak or pasty matrix.

Spoilage growth and proteolysis can soften product during fermentation, drying or storage. A late-developing soft zone with gas, slime or odour requires a different response from a uniformly tender formulation.

Record location, timing, pH, temperature, formulation, bind, moisture and package condition. Compare affected and unaffected units and avoid changing several variables before the cause is tested.

Correct raw material, extraction, formulation, fermentation, heat or storage according to the demonstrated mechanism. More binder or longer cooking can worsen some forms of mushiness.
