Natural and Spontaneous Fermentation

Fermentation initiated by indigenous microorganisms from meat, ingredients, equipment or the production environment rather than by a deliberately added commercial starter culture.

Natural or spontaneous fermentation relies on the resident microbial community and selective process conditions. It is not the same as an absence of control.

Established facilities, ingredients and repeated practice can develop characteristic microbial ecosystems. This history does not guarantee that a new environment contains the same safe flora.

Initial load, species balance, temperature, salt, cure and sugar can change fermentation rate and metabolites from batch to batch.

Traditional history may support identity, but commercial or home publication still requires appropriate hazard analysis, pH performance and other hurdles.

Defined cultures improve repeatability and allow strain-specific instructions. They do not erase traditional identity when the adaptation is labelled clearly.
