Nitrosamines

The carcinogenic compounds that can form when nitrite meets certain amines under heat, the shadow side of curing and the reason nitrite is held as low as it can be.
Nitrosamines are the reason the curing world watches nitrite so closely. They are a family of N-nitroso compounds that form when a nitrosating agent derived from nitrite reacts with the secondary amines naturally present in meat, a reaction driven hard by high heat and favoured by acid. Several of them are carcinogenic, and it is their possible formation, rather than nitrite itself, that sits behind the modern anxiety over cured meat.
The classic case is fried bacon. At the high temperatures of a hot pan, above roughly 170 degrees Celsius, nitrite and the amino acid proline can combine to form nitrosopyrrolidine, and it was this discovery in the 1970s that reshaped curing regulation. It is exactly why bacon in the United States is held to a lower nitrite ceiling of 120 parts per million and must carry 550 ppm of ascorbate or erythorbate, which intercept the nitrosating chemistry and greatly reduce nitrosamine formation, and why nitrate, whose slow reduction is harder to control, is forbidden in bacon altogether.
The defences follow directly from the mechanism. Keep nitrite to the least effective dose; add an ascorbate or erythorbate accelerator to steer the chemistry towards colour and away from nitrosation; avoid searing cured meats at very high heat; and be wary of the smoke, since some nitrosamines and the related polycyclic aromatic hydrocarbons arrive with heavy smoking too. The lowering and re-expressing of nitrite limits across the EU under Regulation (EU) 2023/2108 is, at bottom, a nitrosamine-reduction measure, prompted by an EFSA judgement that dietary exposure could exceed a safe level.
The honest position is one of balance rather than alarm. Nitrite's protection against botulism is real and hard to replace, and the nitrosamine risk is real but manageable by the measures above. The curesmith's job is not to abandon nitrite but to use it wisely: enough to cure and protect, no more, with the accelerator that keeps its chemistry on the safe road.
