Offal and Variety Meats

Offal and variety meats include edible organs, blood, skin, head tissues and other parts outside the standard skeletal-muscle cuts. The exact legal and commercial meaning varies by jurisdiction.

Liver, heart, tongue, kidney, blood, skin and head meat differ greatly in protein, fat, enzymes, pigments and connective tissue. They cannot be treated as one interchangeable raw-material class.

Cleaning may require trimming ducts, glands, membranes, bile-stained areas, clots or damaged tissue. Some materials are scalded, blanched or pre-cooked before formulation, while others enter the product raw.

Organs are highly perishable and can carry heavy surface contamination. Rapid chilling, separation, clean containers and short controlled holding are especially important.

Offal defines many pâtés, liver sausages, blood sausages, head cheeses and regional cooked products. Its use should be documented as intentional product identity, not hidden as anonymous trim.

Permitted tissues, inspection rules, species restrictions and required declarations differ by market. Protected and traditional formulas should be represented accurately while remaining subject to current legal controls.
