Concentrated spice extracts carrying both the volatile oil and the resin of a spice, used for clean, consistent flavour.
An oleoresin is a spice reduced to its active parts, the volatile aroma oil and the non-volatile resin, by solvent extraction. A few drops stand in for a spoonful of ground spice, with two advantages the commercial maker values: the flavour is standardised batch to batch, and the microbial load of raw ground spice is left behind. The trade is that oleoresins lack the texture and visual speckle of whole or ground spice.
