Dried, ground sweet or hot red pepper, used across many sausages for colour and mild warmth.
Paprika is dried and ground Capsicum annuum, ranging from sweet through to hot depending on the variety and whether the seeds and pith are kept. It gives a warm red colour and a mild pepper flavour, and it is a base seasoning in a great many sausages far beyond Spain. Spanish smoked paprika, pimentón, is a distinct oak-smoked type with its own entry.
