Pediocin

Also known as Pediocin PA-1, Pediocin AcH

An anti-Listeria bacteriocin made by Pediococcus, usually delivered in place by a protective starter.

Pediocin is a bacteriocin produced by Pediococcus species, notably Pediococcus acidilactici, and it is one of the most effective natural agents against Listeria. Rather than being added as a purified preservative, it is usually supplied by choosing a protective starter culture that makes the pediocin as it ferments, holding Listeria in check during the early days of a fermented sausage.
