Pediococcus
Also known as Pediococcus acidilactici, Pediococcus pentosaceus
A group of lactic acid bacteria used as starters for warmer, faster ferments, especially in American-style summer sausage. They acidify quickly at higher fermentation temperatures.
Pediococcus acidilactici and Pediococcus pentosaceus are the lactic acid bacteria of choice where the ferment is run warm and fast, the American summer-sausage tradition rather than the cool Mediterranean one. They are more heat-loving than Lactobacillus sakei and acidify rapidly at those higher temperatures.
The trade-off is one of style and speed: a quicker, often tangier drop in pH. Like the other lactic acid bacteria they belong to Microbial Control, chosen to make the ferment fast, safe and predictable.
