Pichia

Also known as Film yeast

A film-forming yeast genus seen on cured surfaces and on brines, much reclassified over the years.

Pichia species tend to form a film on liquid surfaces such as brines and appear among the surface flora of cured meats. Some contribute a little to flavour; others are merely tolerated. The genus has been heavily reclassified, so a good deal of older curing literature places species here that now sit in other genera, and the name is best read as a broad, historical grouping of film yeasts rather than a precise identification.
