Pimentón de la Vera

Also known as La Vera smoked paprika

The oak-smoked Spanish paprika of the La Vera valley in Extremadura, the smoky backbone of traditional chorizo.

Pimentón de la Vera is smoked paprika made in the La Vera valley of Extremadura, where the peppers are dried slowly over oak, taking on the deep smoky note that defines a traditional chorizo and much Spanish charcuterie. It comes in three strengths, dulce (sweet), agridulce (bittersweet) and picante (hot). It holds a protected Spanish designation, which should be verified against the official register before being asserted.
