Post-Process Handling and Recontamination

Post-process handling begins after the final lethality or equivalent control. Slicing, peeling, cooling, conveying and packaging can expose a ready-to-eat surface to the processing environment.

Listeria monocytogenes is especially important because it can persist in wet, cool processing niches and grow during refrigerated storage. A clean-looking room does not prove that those niches are controlled.

Raw and ready-to-eat areas should be separated by layout, airflow, people, tools and material flow. Condensate, forklifts, hoses, drains and shared utensils can cross those boundaries.

Slicers, dicers, peelers, conveyors and packing tables provide repeated contact and difficult-to-clean surfaces. Their sanitation and assembly must be designed around the actual production sequence.

Prompt hygienic packaging reduces exposure, while a post-lethality treatment or growth inhibitor may be used where appropriate. Hygiene control remains necessary even when another intervention is present.

Environmental monitoring, trend review, corrective action and maintenance verify the system. A negative result from a small number of finished-product samples cannot establish that recontamination is absent.
