In cured-meat work, postmortem meat science matters because the condition and structure of meat, fat and casings strongly affect curing, binding, drying, colour, texture and yield. It should be understood as part of the complete product and process rather than as a stand-alone guarantee.
The principal variables include species, anatomy, postmortem condition, pH, water-holding capacity, fat quality, connective tissue, freezing history, hygiene and raw-material selection. Their effects depend on the raw material, formulation, product structure, equipment, process sequence, storage and intended use.
Control requires a documented method, suitable measurement and a clear endpoint. Values borrowed from another recipe, product or jurisdiction are not automatically transferable; safety-critical limits require support for the actual process.
Common failures include unsuitable raw material, excessive drip, soft or oxidised fat, damaged casings, poor trimming and treating sensory quality as a substitute for hygienic control. Normal appearance, familiar tradition or a satisfactory result from one batch cannot by itself demonstrate continuing control.
