Production Sequence and Batch Control
The documented order, identity and control of materials and process steps used to make a defined batch from release of ingredients through packaging or transfer to the next controlled stage.
Production order affects temperature, protein extraction, ingredient distribution, contamination opportunity and the time between protective steps. A written sequence makes those dependencies visible and repeatable.
The batch should start from an approved formulation and identified lots of meat, fat, casings, cure, culture and other ingredients. Weighing checks and line clearance prevent substitutions, omissions and carry-over.
Grinding, mixing, resting, stuffing and transfer should have planned limits for duration and temperature. An unplanned warm hold is a deviation, not an informal extension of the recipe.
Raw, cooked and ready-to-eat status must be clear at every stage. Equipment changeover, allergen control, cure segregation and sanitation should match the product sequence and the next intended use.
Batch records connect materials, measurements, operators, equipment, holds and corrective actions. Rework needs defined identity, quantity, age, safety status and destination rather than automatic return to a later batch.
The same principles apply from a small workshop to an industrial line, but the documentation and control system should fit the operation. Protected specifications and validated commercial procedures remain authoritative in their own context.
