Protein Extraction, Binding and Gelation
The release and functional use of myofibrillar proteins to bind meat particles, retain water and fat, and form a stable matrix during mixing, stuffing and heating.
Myosin and related myofibrillar proteins provide much of the sticky binding phase in comminuted meat systems. Their extraction helps separate pieces behave as a coherent batter or sausage matrix.
Salt increases extraction while mixing or chopping distributes the soluble protein over meat and fat surfaces. Visible tack can indicate progress, but the required endpoint depends on product style and particle definition.
Extraction must occur without excessive warming or fat smearing. Cold, firm fat and controlled equipment energy preserve definition and reduce the risk of a weak or greasy structure.
Added water, phosphates, proteins, binders and pH can change water holding and matrix development. Their use must follow the product formulation and applicable law rather than compensate blindly for poor raw material or processing.
In cooked products, extracted proteins set during heating and help immobilise water and fat. Gel formation is a structural event; it is not by itself evidence that a validated lethality process was achieved.
Control combines raw-material quality, salt level, mixing energy, time, temperature and final process. Crumbling, purge, fat separation and voids can reflect insufficient extraction, overprocessing or a formulation imbalance.
