Raw-Material Selection for Cured Meat
Selecting species, cut, tissue composition, fat, freshness and functional quality that match the intended cured product and its validated process.
A whole ham, fermented sausage, cooked emulsion and pâté need different raw materials. The intended structure, process, hazards and identity define what is suitable.
Species, anatomical cut, age, breed and production system influence flavour, fat and muscle characteristics. Protected products may impose additional raw-material restrictions.
Lean provides protein and structure, fat affects texture and oxidation, and connective tissue can support or damage the intended bite. Formulation must classify these components rather than treat trimmings as uniform.
Receiving hygiene, temperature and time affect initial load. Non-intact or comminuted materials require additional attention because contamination may be distributed internally.
pH, water-holding capacity, colour stability and fat firmness affect curing, binding, drying and yield. PSE, DFD or soft fat can create process faults even when no obvious spoilage is present.
Specifications should define accepted material, condition, temperature, lot identity and permitted substitution. A material change triggers review of formulation and process support.
