Salpicão de Vinhais is a pgi smoked whole pork loin of tras-os-montes, the meaty cousin of chourico. A thick 15–20 cm sausage with a 5–8 cm diameter, dark-brown exterior and bright red-and-white interior. The slice should be meaty, wine-scented and cleanly smoky. The Codex treats the product as a complete curing or cooking system, not simply a famous name. Raw material, cut or particle size, casing, smoke, fermentation, heat treatment and maturation all contribute to the result. The current legal or quality status is IGP / PGI. The source tradition and the Curesmith home method are kept separate.

How to recognise it
A thick 15–20 cm sausage with a 5–8 cm diameter, dark-brown exterior and bright red-and-white interior. The slice should be meaty, wine-scented and cleanly smoky. Grease smear, hollow pockets, case hardening, wet centre, rancidity or uncontrolled dark mould is a fault.

Origins and history
A cured whole pork loin from Vinhais in Tras-os-Montes, holding a PGI, marinated with wine, garlic and pimentao, cased and smoked in the northern manner. Salpicao is the loin counterpart to the region's minced chouricos, richer and meatier, and Vinhais is one of the great fumeiro (smokehouse) towns of the Portuguese north-east. Vinhais is one of Portugal's great fumeiro towns. Salpicão uses larger and meatier pork pieces than ordinary chouriço, packing them tightly into a broad casing before wine seasoning, smoke and mountain drying. Legends and commercial origin stories are identified as such rather than used as proof of the current specification. The official description identifies a cylindrical product around 15 to 20 cm long and 5 to 8 cm in diameter, with a dark exterior, bright red-and-white interior and clear wine and smoke notes.

Sliced thin, richer than chourico. Treat the product as a large-piece sausage rather than an intact whole loin. Salpicão de Vinhais PGI is a large cylindrical smoked sausage made from Bísaro pork. The exterior is dark brown, while the cut surface is bright red and white and carries clear wine and smoke notes.

Method
- Marinate the whole pork loin in wine, garlic, pepper paste and salt.
- Stuff into a wide casing.
- Cold-smoke in the regional fumeiro.
- Air-dry to the target loss.
