Salt-Soluble Proteins and Myofibrillar Extraction

The extraction of functional myofibrillar proteins, especially myosin-rich material, by salt and mechanical action so they can bind particles, retain water and stabilise fat.

Myofibrillar proteins are structural muscle proteins whose solubility and functionality increase in an appropriate ionic environment. Extracted protein appears as tack on meat surfaces.

Salt disrupts protein interactions while mixing, massaging or chopping exposes new surfaces. The effective extraction depends on concentration in the aqueous phase, not only total recipe salt.

Extracted proteins form a sticky matrix that links particles before cooking and gels during heat. In dried products they also support cohesion and sliceability.

Warmth, oxidation, abnormal pH and prior freezing can reduce functionality or promote fat smearing. Cold processing protects both extraction and emulsion stability.

Phosphates, added water, proteins and hydrocolloids can alter extraction and water holding when permitted. Their effects are formulation-specific and should not be conflated with cure.

Use a defined salt basis, sequence, mixing endpoint and temperature limit. Evaluate tack, bind, purge and cooked structure against the intended product.
